You may or may not know but salads are one of my favorite foods in the world. Not just any salad though.

I absolutely hate some salads.

You know, the kind with wilted iceberg lettuce, carrots and tomatoes – I could gag thinking of those.

The salads I love and make on a daily basis are basically a meal on top of lettuce.

They are filled with delicious toppings and fun flavors. They are made with crunch and heartiness and leave me filled up, happy and satisfied!

Salads are my favorite thing to bring to any get together because they allow me to be creative.

By creative, I really mean that I look around my kitchen and I add anything and everything that sounds good.

Some leftover roasted squash – throw it in there.
Half an apple – sure!
A bag of parmesan crisps – absolutely.
Some seasonal nut mix I picked up to snack on from Trader Joe’s – YUP!
Hmm… oh yes of course, some crunchy jalapeños.

This is how all of my salads work.

They are just a big mix of yummy things on top of lettuce!

The key is to make the interesting, and include fun flavors and textures!

Here is a simple formula to get you warmed up to the “everything but the kitchen sink” approach!

Formula for amazing salads:
Lots of greens – romaine, arugula, spinach, lettuce, kale, slaw
Great protein – grilled chicken, shrimp, ground turkey, shredded pork, eggs, bacon, steak,
Extra veggies
Something crunchy + sweet

Mexican – add corn, beans, tomatoes, cumin, avocado, tortilla strips,
Greek – add roasted red pepper, artichoke hearts, green beans, sumac, feta, pita chips
Asian – add edamame, shredded carrots, green onions, sesame seeds,
Cobb – add tomatoes, cucumber, bacon, hard boiled egg, feta
Berry – add strawberries, caramelized nuts, goat cheese
